This is my favorite time of year in the veggie garden! Cool temperatures mixed with warm (or hot) days, plenty of rain (hold the hail please!) and not too many insects yet make the edibles such a pleasure to tend.
My last look at these beds was almost exactly a month ago, when I planted many of the seedlings. What a difference a month makes!
Here's what it looked like at the start of April:
The kale dominates, and that's exactly how I like it! Can't get enough kale!
I can't believe how quickly the pak choi bolted!
The kale is flowering too, but that's expected:
We're eating the delicious and tender flower buds as quickly as we can!
The beets are growing a bit slower than I expected, but they were quite small when I planted them...
I expect them to really start taking off very soon. This variety (Shiraz tall-top) is supposed to produce a large quantity of leaves, which I'm really excited about -- beet greens are so delicious!
The lettuce is about the slowest thing I've ever planted, but it's coming in:
The gailan (Chinese Kale) next to the lettuce is doing well, I think. I haven't grown it before so don't know what to expect.
The kale though is king right now:
Partly because some of the plants had main stems that were killed over the winter, causing the plants to produce several side shoots instead:
Really bushy plants!
The garlic is doing really well too, but I expect nothing less as it's such an easy crop to grow!
There are a few other things growing too, like chives, garlic chives, oregano, and tansy:
But those are just secondary plants growing around the edges of the main veggie beds.
How are your edibles doing so far this spring?
.
You have DEFINITELY had warmer weather... geesh!
ReplyDeleteHad to come back to ask... what do you do with all your greens? How do you eat them?
ReplyDeleteLisa: Kale is eaten raw in salads, or sauteed as a side-dish. I eat lots of the flower buds as a snack right off the plant -- I can't do that later in the year when there are aphids, caterpillars, spiders, and who knows what else on everything! :)
ReplyDeleteNice to find your blog. Great to see all your veg growing so well. I' m just really getting into veg. I didn't know you can eat beetroot leaves. Or that you can eat kale flower buds.
